Ingredients

apricots
peeled and sliced
1
lemon
juiced

water

ground cinnamon

cup
brown sugar

cup
mascarpone cheese
or cream cheese
¼
cup
powdered sugar

tbsp
vanilla extract

small flour tortillas

tbsp
butter
1
tbsp
cinnamon sugar
1/4
cup
honey
Instructions
Preheat oven to 425°F.
Add the sliced apricots to a large skillet over medium heat.
Top with the lemon juice and water.
Sprinkle with the cinnamon and sugar.
Caramelize for 10-12 minutes.
Whip the mascarpone, powdered sugar and vanilla together in a large bowl.
Spread the cheese mixture in the middle of each tortilla.
Top with caramelized apricots.
Roll the tacos tightly and place on a baking sheet.
Brush with butter and sprinkle with cinnamon sugar.
Bake for 12-15 minutes.
Remove from the oven and immediately drizzle with honey.
