Ingredients

Instructions
Combine the flour, baking powder and salt in a small bowl.
In a large mixing bowl combine the butter and sugar with a hand mixer.
Add the eggs, vanilla and coconut milk.
Add the flour mixture.
Mix together well, then add the passion fruit and mix with a spatula.
Add the poppy seeds.
Mix with a spatula then transfer the muffin batter to a large Ziploc bag.
Cut a small hole in the corner of the Ziploc bag and pipe the batter into each mini muffin tin a little more than ¾ full.
Top each muffin with a couple shreds of coconut and place in the oven at 350°F for 15-18 minutes.
