In a large bowl, combine the turkey, buffalo sauce, carrots and celery.
Spread ½ tbsp of butter on each slice of bread, flip and top half of the slices of bread with a slice of pepper jack cheese, ½ cup of the buffalo turkey mixture, another slice of pepper jack cheese and another slice of buttered bread (butter facing out).
Repeat until all 6 sandwiches have been made.
Heat a large skillet over medium-high heat.
Add the sandwiches and cook for 3-4 minutes per side, or until cheese is melted and the bread is toasted.
