In a small bowl, combine the cumin, cilantro and salt.
Rub this mixture on the chicken breast and place in the slow cooker.
Combine the ingredients to make the lime cumin dressing and pour over the chicken in the slow cooker.
Cook on low for 6-8 hours, or on high for 3-4 hours.
Remove the chicken and shred, then place back in the sauce in the slow cooker and toss.
Serve on corn tortillas, or tortilla chips for mini tacos, topped with avocado, fresh cilantro, jalapeños, grated cheese or the toppings of your choice.
