Ingredients

olive oil

onion
diced

small serrano chile
thinly sliced

white wine

fresh tomatoes
diced

lemon juice
freshly squeezed

fresh basil

tbsp
fresh Italian parsley

sea salt

ground black pepper

spaghetti noodles

chicken broth

large shrimp
peeled & deveined

cup
fresh parmesan cheese
grated
Instructions
Add the olive oil to a large pot or dutch oven over medium heat.
Once the oil is hot, add the onion, saute 4-5 minutes.
Add the garlic and serrano chile, saute for an additional 1-2 minutes, then add the white wine.
Simmer for 1-2 minutes, then add the diced tomatoes, lemon juice, basil, parsley, salt and pepper.
Break the spaghetti noodles in half, then add to the pot.
Pour the chicken broth over the noodles.
Mix everything together and bring to a boil.
Reduce heat, cover and cook for 12 minutes.
Remove the lid and add the shrimp.
Place the lid back on the pot and cook for an additional 3-4 minutes.
Serve topped with fresh grated parmesan cheese.
