Ingredients you'll need

Brine the pork chops overnight to make them extra juicy.

Remove the pork chops from the brine and pat dry.

Generously cover with pork chop seasoning.

Place a water pan in the smoker to keep the pork chops moist.

Place the pork chops in a 225°F preheated smoker.

Smoke until the internal temperature of the pork reaches 140°F.

Optionally reverse sear and glaze the pork chops with pepper jelly - my secret ingredient!

Slice and serve the pork chops.
