Add a sheet of pastry dough to a square dish, prick all over with a fork.

Cover with foil and bake for 25 minutes.

Cook onions, celery and carrots in butter.

Add mushrooms and garlic.

Add diced red potatoes.

Cover the vegetables in flour.

Pour in vegetable broth and stir to combine.

Add salt, pepper, thyme and frozen peas.

Simmer until the filling is thick and creamy.

Add to baked puff pastry dough crust.

Top with strips of puff pastry dough and brush with a whisked egg.

Bake for 30 minutes.
