Cheddar Ranch Instant Pot Potato Salad

WHAT YOU NEED

Add water to Instant Pot, place cubed red potatoes on the trivet & top with eggs

Select the “manual” button on the Instant Pot, set it to high pressure and set the timer for 4 minutes.

Quick release the pressure on the Instant Pot, move the eggs to an ice bath, drain the potatoes & place them in a bowl

Combine sour cream, ranch seasoning, shredded cheddar cheese and diced green onions.

Peel & chop the hard boiled eggs, add them to the bowl with the potatoes and chopped celery.

Add the sour cream cheddar sauce and fold the ingredients together.

Chill for at least 30 minutes in the fridge.
