Cook shallots, curry powder and a bay leaf for 3 minutes.

Add tomato paste and chicken broth, bring to a simmer.

Season with salt, pepper, brown sugar and lemon juice.

Simmer, then strain the curry sauce.

Add mayonnaise and creme fraiche.

Stir to combine, to make a creamy curry sauce.

Add cooked, shredded chicken, diced apricots and slivered almonds.

Stir to combine, then serve.

It's delicious as a salad, or on tea sandwiches.
