Cook onions, celery, carrots and garlic in olive oil.

Add the cooked veggies to a bowl with the remaining meatloaf ingredients.

Stir until completely combined.

Press the meatloaf mixture into a loaf pan.

Bake for 25 minutes, then top with buffalo sauce and blue cheese. Bake for another 20 minutes.

Remove from the oven and wait 15 minutes before slicing.

Slice and serve with mashed potatoes, salad or veggies.
