WHAT YOU NEED

Combine olive oil, lemon juice, mint, oregano, salt and pepper in a large bowl.

Add sautéed onion, bell pepper and garlic.

Add grape tomatoes.

Add cooked orzo, olives and cucumber.

Top with feta cheese and chopped fresh mint
