What you'll need:
Combine the dry ingredients.
Mix in the wet ingredients and form a ball.
Chill the dough for 15 minutes.
Roll it out onto parchment paper dusted with GF flour.
Cut shapes and place the dough on a parchment lined baking sheet.
Bake for 5-8 minutes, then let cool.
Mix up an easy 3 ingredient icing in different colors.
Decorate the cookies with icing and sprinkles!
