Peel and grate the zucchini into a large colander in the sink. Sprinkle with salt and leave it for 20-60 minutes to drain.

Add the zucchini to a bowl with cooked onions and garlic, feta, olive oil, eggs, greek yogurt, dill, parsley, mint, salt and pepper.

Stir to combine all of the ingredients.

Add a sheet of phyllo dough to the bottom of a greased baking dish. Brush with olive oil.

Continue to layer 7 more sheets of phyllo dough, brushing each sheet with olive oil.

Add the zucchini feta filling on top of the phyllo dough.

Top with 6 more sheets of phyllo dough, brushing with olive oil after each sheet.

Bake for 50-60 minutes, or until the top layer of the crust starts to turn golden brown.

Rest for 20 minutes before slicing into pieces to serve.
