Chicken Enchiladas with Creamy Avocado Sauce

What you'll need

Load all sauce ingredients into a blender.

Blend until smooth.

Mix sauce with shredded chicken.

Pour some sauce in the bottom of a casserole dish.

Pour 1 cup of sauce on a plate.

Dip each side of a tortilla in the sauce, and fill with chicken and cheese.

Roll the tortilla up, place seam side down in the dish, and repeat until full.

Cover with remaining sauce and cheese, and bake.
