Southwestern Egg Rolls (Chili's Copycat Recipe)

Ingredients you'll need

Pound a piece of chicken until it's 1/2 inch thick.

Coat in taco seasoning, then cook for 4-5 minutes per side.

Cook minced red onion, bell pepper and jalapeno for 4 minutes.

Add spinach, black beans, corn, diced chicken, cilantro and taco seasoning.

Stir everything together, then turn off the heat on the stove.

Add shredded pepper jack cheese.

Stir to combine the cheese with the other ingredients.

Spoon some of the filling into the middle of a flour tortilla.

Tuck in the sides, then roll the tortilla up and over the filling.

Repeat to make 12 egg rolls.

Place the egg rolls in an air fryer, spray with cooking spray, cook for 4-5 minutes per side.

Remove the egg rolls from the air fryer when they're golden brown and crispy.

The egg rolls can also be cooked in the oven for 12-14 minutes.

Serve with creamy avocado ranch or guacamole for dipping.
