Traditional Spanish Chorizo Chicken Paella
What you'll need
Combine lemon juice and saffron threads in a small bowl.
Sauté chicken thighs with salt and pepper in a skillet.
Add diced onion, bell pepper and crushed garlic.
Toss in sliced chorizo.
Mix in chopped tomato, paprika, red pepper flakes and the saffron threads in lemon juice.
Add bomba rice.
Add broth & peas, bring to a boil, then reduce to a simmer.
Cook until the rice is tender and the liquid is absorbed.
Place strips of piquillo peppers on top of the paella.
Cover, rest 10 minutes, then serve.
An easy and flavorful one pot meal!
