If you love Chipotle burritos, then you're really going to love these grilled burritos, filled with fajita grilled chicken, veggies & cilantro lime rice!
In a medium bowl, combine the olive oil, 2 tbsp lime juice, 1 tbsp cilantro, garlic, cumin, chili powder, paprika and sea salt.
Add the chicken breasts and marinate for an hour (or up to 8 hours) in the refrigerator.
Slice each bell pepper into four large pieces and slice the onion in large rings.
Heat a grill to medium.
Add the chicken to the grill, grill for 10-12 minutes per side.
About 6 minutes before removing the chicken from the grill, add the bell peppers and onions to the grill and grill for 2-3 minutes per side.
While everything is grilling, heat the white rice in the microwave for 90 seconds. Mix in the remaining 2 tbsp lime juice and 1 tbsp cilantro, set aside.
Remove everything from the grill and place on a cutting board, remember to leave the grill turned on to medium heat.
Dice the chicken, bell peppers and onions.
In the middle of each tortilla, sprinkle approximately ¼ cup of pepper jack cheese, top the cheese with the cilantro lime rice, black beans and grilled chicken, peppers and onions.
Fold the ends over, then roll up the burritos tightly.
Place seam side down on the grill.
Grill for 2 minutes per side.
Remove from the grill and serve with sour cream, guacamole, salsa, pico de gallo, hot sauce or a combination of your favorite burrito toppings!
