Add the spinach, garlic, paprika, cumin, cinnamon, nutmeg, salt, black pepper, cayenne pepper, lemon juice and olive oil to a blender or food processor.
Turn on and puree until smooth.
Turn the blender off and pour the mixture into a large ziplock bag, add the chicken to the bag and toss together.
Marinate for at least 30 minutes.
Remove the chicken from the bag and skewer 6-8 pieces of chicken on 6 skewers. *If using wood skewers, be sure to soak in water for an hour before using.
Grill the chicken skewers over medium heat for 5-7 minutes per side.
