In a large bowl, toss the mixed greens with the fuji apple salad dressing.
Divide the dressed greens between four bowls.
Top with the apple chips, cooked chicken, gorgonzola cheese, red onion, tomatoes and pecans.
For the cooked chicken breast, I recommend this grilled Lemon Rosemary Chicken recipe. It’s delicious and pairs perfectly with the salad! If you’d like something easier, pick up a rotisserie chicken at the grocery store, shred or chop the breast meat and add it to the salad.
Not a fan of gorgonzola cheese? Use crumbled goat cheese or feta cheese on the salad.
This salad is naturally gluten free.
To make this recipe dairy free, omit the gorgonzola cheese.
