panko breadcrumbs

small corn tortillas

avocados

fresh cilantro
Chipotle BBQ Sauce

apple cider vinegar

tomato paste

lime juice

brown sugar

garlic

chipotle pepper in adobo sauce

adobo sauce

from the can of chipotle peppers in adobo
Instructions
Prepare the chipotle BBQ sauce by blending all of the ingredients together in a blender or food processor until smooth.
Place the flour, whisked eggs and breadcrumbs in three separate shallow bowls.
Dredge the shrimp in the flour, then dip in the egg, drip off any excess egg, then coat the shrimp in the breadcrumbs.
Heat the coconut oil in a large skillet over medium high heat.
Once the oil is hot, add the shrimp and cook for 1-2 minutes per side.
Remove the shrimp and place on a paper towel to drain any grease.
Place a few slices of avocado on each tortilla, top with 2-3 pieces of crispy shrimp, a drizzle of chipotle bbq sauce and fresh cilantro.
