Combine the sausage, cream cheese, cheddar cheese, green chilies and taco seasoning in a large bowl.
Form into 18-20 balls.
Place a large skillet or dutch oven on the stove over medium heat.
Add the meatballs to the skillet and brown on all sides for 2-3 minutes.
Once the meatballs are browned, pour the hot sauce over the balls.
Cover, reduce heat to low and simmer for 15-20 minutes.
Notes
Mild or hot pork sausage can be used. I used 1 lb mild and 1 lb hot to make these meatballs slightly spicy.The spice of the meatballs will be determined by both the sausage and hot sauce you use. Feel free to adjust the level of spiciness to your liking. I used Pico Pica Hot Sauce for this recipe, as it's a family favorite!To make these taco meatballs vegetarian, substitute 2 lbs soyrizo for the pork sausage.
