BBQ Chicken Peach Bacon Cheddar Quesadilla

Ingredients

boneless, skinless chicken breasts

bbq sauce
divided

fresh peaches

cheddar cheese
spicy or traditional – shredded

Instructions
Preheat the oven to 400°F.
Lay the bacon strips across a wire rack on top of a foil-lined baking sheet.
Place in the oven for 20-25 minutes, or until crisp.
While the bacon is in the oven, toss the chicken breasts with ½ cup BBQ sauce.
Place the chicken on a grill, or grill pan, over medium high heat.
Grill for 8-10 minutes per side.
Slice the peaches in half, remove the pit and grill the peaches skin side up for 3-4 minutes.
Once the bacon is cooked, and the chicken and peaches are grilled, peel the skin from the peaches and dice. Also dice the bacon and chicken.
Combine the diced peaches, chicken and bacon in a large bowl with ¼ cup BBQ sauce.
Lay two of the tortillas on a flat surface, cover each tortilla in app. ½ cup cheese, then top with the BBQ chicken, bacon and peaches.
Top each quesadilla with another ½ cup of cheese.
Place another tortilla on top and cook in a large skillet over medium high heat for 5-6 minutes per side.
Once the quesadilla is golden brown on both sides, slice it into halves, quarters or triangles.
Drizzle with the additional ¼ cup BBQ sauce, or serve the sauce on the side for dipping.
