Slice the baguette into ½ inch thick slices. Place them on a baking sheet and brush with 1 tablespoon olive oil. Place in the oven and bake for 5-7 minutes, or until the bread is golden brown and toasted.
In a medium bowl combine the diced strawberries, balsamic vinegar, fresh basil and ¼ teaspoon salt.
In a small bowl combine the goat cheese with the remaining tablespoon olive oil and ¼ teaspoon salt.
Remove the toasted baguette slices from the oven and spread the goat cheese on each slice. Top with the strawberry balsamic mixture.
Optionally drizzle with balsamic glaze before serving.
Notes
Cheese substitutes: any soft cheese, like ricotta cheese, cream cheese, mascarpone or blue cheese can be used instead of the goat cheese.
Balsamic glaze can be found near the balsamic vinegar at most major grocery stores. It might also be labeled as balsamic reduction. You can also make your own at home, refer to the blog post above for instructions.
Store any leftover strawberry mixture in an airtight container in the fridge for up to 3 days.
