Ingredients
2sweet potatoes, approximately ½ pound in size
Instructions
Microwave Method
Pierce the sweet potatoes with a fork, 8-10 times.
Place on a paper towel or plate in the microwave.
Microwave on high for 4 minutes.
Use tongs or an oven mitt to flip the sweet potatoes.
Microwave for an additional 3 minutes, or until fork tender.
Oven Method
Preheat the oven to 425°F.
Pierce the sweet potatoes with a fork, 8-10 times.
Place the potatoes on a foil-lined baking sheet and into the oven for 40-50 minutes, or until fork tender.
Air Fryer Method
Pierce the sweet potatoes with a fork, 8-10 times.
Add to the basket of an air-fryer, lined with parchment paper.
Air fry at 400°F for 30 minutes, or until fork tender.
Notes
Use tongs, or an oven mitt to gently squeeze the potato to tell if it’s done. If the potato is still firm when squeezed, that means it needs to cook more.
Baked sweet potatoes can be stored in an airtight container in the refrigerator for up to 5 days. Reheat for 2 minutes in the microwave, at 400°F in the air fryer for 5 minutes, or at 400°F in the oven for 10 minutes.
Baked sweet potatoes can be stored in a freezer-safe container in the freezer for up to 6 months.
