Cajun Potatoes
Roasted cajun potatoes are crispy, incredibly flavorful, and easy to make in 40 minutes! Serve as a side with blackened chicken, pork, or fish.

paprika

thyme leaves
Instructions
Preheat the oven to 375°F. If your oven has a convection setting, I recommend using that for extra crispy potatoes.
In a large bowl, toss the quartered red potatoes with the minced garlic and olive oil.
In a small bowl, combine the black pepper, kosher salt, paprika, oregano, garlic powder, onion powder, cayenne pepper, and thyme leaves.
Sprinkle the spice mixture over the potatoes and toss to coat.
Spread the potatoes out in an even layer on a baking sheet and place in the oven for 30-35 minutes, or until crispy.
Notes
Type of potatoes:
gold or purple potatoes can also be used in this recipe instead of red potatoes.
