These 4 ingredient Creamy Puff Pastry Pickle Bites are so easy to make and perfect for a party appetizer, or game day snack! Simply combine minced dill pickles with cream cheese and hot sauce, then add it to baked puff pastry shells for the perfect bite-sized snack for pickle lovers!
Place a sheet of puff pastry dough on a floured surface. Lightly dust with flour and use a rolling pin to roll it out just a bit thinner than it started. Slice the dough in 24 equal small squares. Place each square of puff pastry dough in a mini muffin tin. Repeat with the other sheet of puff pastry dough to make 48 bites.
Place in the oven and bake for 12 minutes.
While the puff pastry is baking, combine the softened cream cheese with the hot sauce and ½ cup minced pickles in a mixing bowl.
Remove the puff pastry bites from the oven and use the round end of a spatula handle to press down in the middle of the puff pastry bites, so they’re ready to fill.
Use a small spoon, or a pastry piping bag to fill the puff pastry bites with the creamy pickle filling.
Place the bites back in the oven for 5-7 minutes.
Remove the bites from the oven and top each one with a few more minced pickles.
Notes
Before you start the recipe, make sure to defrost the puff pastry dough. To do this, remove the puff pastry dough from all packaging. Place the sheets on a cutting board to defrost at room temperature for 30 – 40 minutes. You can also remove the cream cheese from the refrigerator at this time to soften at room temperature.
This recipe makes 48 pickle bites. If you'd like to cut the recipe in half, only use one sheet of puff pastry dough, 4 ounces of cream cheese, 2 tablespoons hot sauce and ½ cup minced pickles.
You can make the filling up to 5 days in advance and store it in the fridge. You can also bake the puff pastry bites for 12 minutes (without the filling) in advance and store them in an airtight container on the counter for up to 2 days.
Store any leftover baked pickle bites in an airtight container in the fridge for up to 7 days.
