Instructions
In a medium bowl, combine the soy sauce, ketchup, white wine vinegar, sweet chili sauce, honey, red pepper flakes, fresh ginger, and pineapple juice. Set aside.
Add the sesame oil to a large skillet or wok on the stove over medium-high heat.
Add the onion and bell pepper, cook 2-3 minutes, add the garlic and chicken, cook for an additional 5-6 minutes.
Add the pineapple and sweet and sour sauce.
Simmer to reduce the sauce down slightly for 3-4 minutes, then add the rice and cook for an additional 3-4 minutes.
