Crock pot soups are my jam! They’re so easy to toss together in the morning and such a delicious dinner to come home to!

Taco Soup is one of my childhood favorites, that I continue to make over and over again! And Kurt requests this French Onion Meatball Soup almost every week. But when it comes to a soup that’s light and flavorful, this Turkey Kale Soup is my go-to!

Lean ground turkey, fresh kale, diced onions and cannellini beans keep this soup light and healthy. While oregano, fennel seeds, garlic, salt and pepper add delicious flavor!

Serving this soup with a warm and crusty baguette for dipping is totally optional, but highly recommended!

I love pesto!

I love it so much that I’ve made 8 different varieties of pesto on the blog!

  1. Basil Pesto
  2. Sun Dried Tomato Pesto
  3. Spinach Pesto
  4. Vegan Pesto
  5. Cilantro Lime Pesto
  6. Paleo Walnut Sage Pesto
  7. Arugula Blue Cheese Pesto
  8. Kale Pesto

One of my favorite things about pesto is it’s versatility. You can easily toss it on a pizza, pasta or eggs. Add it to a sandwich, grilled chicken or a salad.

Toss it in risotto or spread it on baked salmon. The options really are endless!

My other favorite thing about pesto is how easy it is to make. Toss all of the ingredients in a food processor and you’ve got delicious homemade pesto in just 5 minutes!

This kale pesto is not only easy, delicious and versatile, it’s also packed with health benefits!

Kale helps with cancer prevention, lower cholesterol and lower blood pressure.

One cup of kale contains 36 calories, 5 grams of fiber and 15% of the daily requirement of calcium. It also contains 15% vitamin B6, 40% magnesium, 180% vitamin A, 200% vitamin C and 1,020% vitamin K.

It is also a good source of five minerals, copper, potassium, iron, manganese, and phosphorus.

This recipe has 4 cups of kale in it. That’s a lot of vitamins!

One of my favorite appetizers is Avocado Bruschetta.  And when it comes to salads, I can’t get enough of this Crispy Goat Cheese Avocado Salad! Every time I post a picture of this salad on Instagram, people go crazy!

When it comes to dinner, I could eat these Cheesy Avocado Corn Enchiladas every night! They are seriously THE BEST vegetarian enchiladas in the world. For lunch, I’m always down for an Avocado Bacon Tomato Grilled Cheese Sandwich!

Gluten Free Orange Chicken

Gluten free orange chicken is a quick & easy recipe with the most delicious sauce! It’s healthy & more delicious than Chinese restaurant take out!

Gluten free orange chicken in bowl with diced scallions and chopsticks

My obsession with making Chinese food favorites gluten free started with this Gluten Free General Tso’s Chicken recipe. It then continued on to Gluten Free Chinese Honey Chicken and this Gluten Free Orange Chicken.

Needless to say, if you’re gluten free, you don’t have to miss out on your favorite Chinese food favorites anymore!

Instead of battering the chicken in flour, I batter it in cornstarch. And instead of deep frying the chicken, I stir fry it on the stove. I use gluten free soy sauce to make the best orange sauce ever!

Out of all the recipes I’ve ever made on the blog, this is my brothers favorite recipe! The best part is, it’s made in just 29 minutes. It’s easy enough to whip up for dinner tonight!
