Ingredients

sweet potatoes
1/2
cup
coconut milk
1
tbsp
fresh grated ginger
or 1 tsp ground ginger
1
tsp
ground cinnamon
Instructions
Cut the sweet potatoes into cubes.
Place the sweet potatoes in a large pot of boiling water and cook for 25 minutes or until fork tender.
Drain the water from the pot. Add the milk, ginger and cinnamon.
Mash well.
Spoon into a large bowl and serve.
