Optional: add the cubed potatoes to a large bowl of salted water (with 1-2 teaspoons salt). Let the potatoes soak in the water for 30-60 minutes. Drain the potatoes and pat them completely dry with a paper towel.
Preheat an air fryer to 400°F.
Toss the potatoes with the olive oil, parmesan cheese, Italian seasoning, sea salt and dried minced garlic.
Spread the seasoned potatoes in an even layer in the air fryer basket.
Air fry for 10 minutes at 400°F.

Do not season the potatoes with the salt until you’re ready to cook them in the air fryer. Seasoning the potatoes with salt, then letting them sit for more than a couple of minutes, means the salt will pull water from the potatoes and they are more likely to come out of the air fryer soggy.
