10.4ouncesGarlic Herb Boursin Cheese, two 5.2 ounce packages
2pintscherry tomatoes, 20-24 ounces or 4 cups
½teaspoonsalt
½teaspoonblack pepper
1poundpenne pasta, or medium pasta shells
1teaspoonhot sauce, adjust to your spice preference
Instructions
Preheat the oven to 400°F.
Slice the chicken breasts in half lengthwise through the middle so you have 4 pieces of chicken. Coat the chicken in 1 tablespoon olive oil, then 3 tablespoons cajun seasoning. Place the chicken breasts on a baking sheet.
Add the Boursin cheese and cherry tomatoes to a 9 inch x 13 inch oven-safe casserole dish. Drizzle the tomatoes with the remaining 2 tablespoons olive oil, and season with the salt and pepper.
Place the chicken, and the cheese and tomatoes, in the oven and roast for 20-25 minutes.
While everything is in the oven, bring a large pot of water to boil on the stove. Once boiling, add the pasta and cook according to the package instructions. Remove 1 cup of pasta water and set it aside before draining the pasta.
After the cooking time, remove the baking dish of cheese and tomatoes from the oven. Also remove the chicken and transfer it from the baking sheet to a cutting board.
Add the cooked pasta, pasta water, hot sauce, and remaining tablespoon of cajun seasoning to the baking dish with the Boursin and tomatoes, stir to combine everything. Dice the chicken and mix it into the pasta. Serve immediately.
Notes
Store leftover Cajun pasta in an airtight container in the fridge. I recommend reheating it in the microwave, or on the stove, with a little bit of broth, milk, or heavy cream, to prevent it from drying out. If reheating it on the stove, add the pasta to a pot on the stove over medium heat. Add some liquid to prevent it from drying out, cover the pot and let it heat up for 5-7 minutes.
To make this recipe vegetarian, omit the chicken. Add more vegetables, like zucchini, mushrooms, bell peppers, or onions, to roast with the cherry tomatoes and cheese.
