Kale Turkey Soup
Slow Cooker Kale Turkey Soup is made with white beans and lean ground turkey. It's a healthy, gluten free recipe that's easy to make in a crock pot!

white onion

garlic

lean ground turkey

can cannellini beans

drained & rinsed

chicken broth

kale

chopped

teaspoon
dried oregano
1
teaspoon
fennel seeds
,
ground with mortar and pestle
½
teaspoon
salt

teaspoon
black pepper
2
tablespoons
parmesan cheese
,
grated - optional topping
Instructions
Heat the olive oil in a large pot on the stove over medium heat.
Add the onion, garlic and ground turkey, cook for 8-10 minutes. Transfer to a slow cooker.
Add the beans, chicken broth and kale to the slow cooker, along with the oregano, fennel, salt and pepper.
Cook on low for 4-6 hours or on high for 2-3 hours.
Serve the soup topped with parmesan cheese, if you'd like.
