Instructions
Brush 1 tablespoon of olive oil all over the flank steak, then rub on all sides with the coffee rub.
Heat a grill to medium-high heat.
Rub the onions, sliced into rings, with the remaining 1 tablespoon olive oil on all sides, then place them on the grill for 2-3 minutes per side.
At the same time, add the steak to the grill for 4-6 minutes per side.
Remove the steak from the grill and place on a cutting board, immediately brush the steak with ¼ cup of the coffee BBQ sauce.
Let the steak rest for 10 minutes, then thinly slice the steak.
Before turning the heat off on the grill, place the sub rolls on the grill inside face down for 2-3 minutes to toast.
Remove from the grill and spread the garlic herb goat cheese on the bottom of each roll.
Place the sliced steak on top of the goat cheese.
Drizzle the additional BBQ sauce on top of the steak, then top with the grilled and crispy onions.
Place the top bun on the steak sandwich and dig in!
