Ingredients
4cupswatermelon, cubed
2cupsgrape tomatoes, sliced in half
¼cupfresh mint, chopped
½cupred onion, thinly sliced
2tablespoonsbalsamic vinegar
2tablespoonsolive oil
¼cupfeta cheese, crumbled
Instructions
Add the watermelon, tomatoes, mint and onion to a large bowl.
Add the balsamic vinegar and olive oil, toss to coat.
Top with the feta cheese and serve.
Notes
Omit the feta cheese to make this recipe vegan.
This recipe is naturally gluten free.
If making ahead of time, wait to add the balsamic vinegar, olive oil and feta cheese, until right before serving.
