Make the best Air Fryer Chicken Fajitas with perfectly seasoned, juicy, tender chicken thighs and crisp, flavorful bell peppers and onions. Pile the sizzling fajitas into warm tortillas, add your favorite toppings, and enjoy a quick and delicious dinner. This recipe is easy to make in 30 minutes and a game-changer for busy weeknights!
Pat the chicken thighs dry with a paper towel, then add them to a large bowl. Pour the lime juice and 1 tablespoon olive oil over the thighs and toss until they’re coated.
Sprinkle 2 tablespoons fajita seasoning over the thighs and toss to coat them in the seasoning.
Place the chicken thighs in an air fryer in a single layer.
Air fry at 400°F for 6 minutes. Flip and cook for another 6 minutes, or until the thickest part of the thigh reaches 160°F.
While the chicken is cooking, toss the sliced onions and bell peppers with the remaining tablespoon of olive oil and tablespoon fajita seasoning.
Remove the chicken from the air fryer and let it rest while you cook the veggies.
Add the sliced onions and bell peppers to the air fryer. Cook at 400°F for 10 minutes, shaking halfway through the cooking time.
While the peppers and onions are cooking, slice the cooked chicken thighs after they rest for 5 minutes.
Toss the cooked peppers, onions and chicken together, then serve immediately.
Notes
Serve the air fryer fajitas in warm corn or flour tortillas with toppings like sour cream, guacamole, salsa, or chipotle sauce. Or use them to make quesadillas, taquitos, or burrito bowls.
Store leftover air fryer chicken fajitas in an airtight container in the refrigerator for up to 5 days. To reheat, add the leftover chicken and veggies to the air fryer and cook at 400°F for 3-4 minutes.
