I figured if I was going to be on the news on Labor Day, I might as well make the segment fun and useful to those at home on the couch, possibly nursing the almighty hangover from the previous nights festivities!
I traded in greasy bacon, which can actually upset your stomach even more and worsen your hangover, for crispy apple chips which add a hint of sweetness and nice little energy boost to the salad! (You can purchase apple chips at the store or make them at home with this recipe.)
I traded in the cheese for creamy avocados which contain lycopene (also found in the juicy tomatoes on this salad) which helps reduce inflammation and fuels you up with antioxidants!
Eggs are a great hangover food because they’re easy on the stomach and full of amino acids which help support liver function and will get your body back up and going quick!
I also added honey dijon chicken to the salad. The fructose in the honey will help you burn off the booze and the chicken will give you a boost of protein!
Whether fighting off the remnants of last nights party or just looking for a healthy and delicious salad, this twist on a traditional Cobb will do the trick!
- 2 cups spinach
- ½ cup tomatoes (chopped)
- 1 honey dijon chicken breast (cooked and chopped)
- 2 hard boiled eggs (chopped)
- 1 avocado (diced)
- ½ cup apple chips
- ¼ cup honey dijon dressing (recipe below)
Honey Dijon Dressing
- 2 garlic cloves (crushed)
- ¼ cup olive oil
- 1 lemon (juiced)
- ¼ cup honey
- ½ cup Dijon mustard
- ¼ tsp ground ginger
- ¼ tsp kosher salt
- ¼ tsp cracked black pepper
Combine all ingredients in a small bowl.
Cover and place in the refrigerator for up to 2 weeks.
Prepare the salad by placing the spinach in the bottom of two bowls. Layer all of the ingredients on top in separate rows. Serve the dressing on the side.
This Healthy Cobb Salad is a new favorite that I will definitely be eating all the time… even without a couple glasses of wine the night before 😉
