Grilled Vegetable Lo Mein

Fresh vegetables are tossed in an Asian marinade, grilled, then mixed with Lo Mein noodles and a simple Asian sauce for an easy summer vegetarian dinner!
Yesterday was the first official day of summer, and with the start of summer comes the start of grilling season!
When most people think of grilling, they think meats, like Coffee Crusted Tri Tip, Chili Lime Shrimp, or Chicken Fajita Skewers. While I love all of these meaty dishes on the grill, I also love grilled vegetables!
Over the years I’ve created a couple of different grilled vegetable recipes on the blog like Grilled Vegetable Skewers and Grilled Romaine Salads. This year, I wanted to create even more recipes that I could incorporate grilled vegetables into!
Since noodle bowls are all the rage these days, I decided to combine grilled vegetables in an Asian style noodle bowl and thus Grilled Vegetable Lo Mein was born!
I absolutely love this dish because everything from the grilled vegetables to the sauce is so flavorful, and it’s super easy to make in only 29 minutes!
This light pasta dish is perfect for tossing together as a meal or as a side dish, and in true Chinese food fashion, it makes really delicious leftovers!
Ingredients
Grilled Vegetables
- 2 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tsp fresh ginger (grated)
- 1 tsp fresh garlic (crushed)
- 1 tsp steak seasoning
- 1 tsp sesame oil
- 1 large zucchini (sliced)
- 1 large yellow squash (sliced)
- 1 Japanese eggplant (sliced)
- 8 oz baby bella mushrooms
Lo Mein Noodles & Sauce
- ¼ cup soy sauce
- 1 tbsp sriracha
- 1 tbsp rice vinegar
- 1 tbsp honey
- 1 tbsp chili paste
- 3 cloves garlic (crushed)
- 1 tsp freshly grated ginger
- 1 tsp sesame oil
- 10 oz Lo Mein Noodles (or Spaghetti Noodles, if Lo Mein can’t be found)
Begin by preparing the grilled vegetables.
In a large bowl, whisk the soy sauce, rice vinegar, ginger, garlic, steak seasoning and sesame oil together. Toss in the zucchini, yellow squash, Japanese eggplant and baby bella mushrooms.
Heat a grill, or grill pan, over medium heat. Once hot, add the veggies to the grill, and grill for 3-4 minutes, flip and grill for an additional 3-4 minutes.
Remove from the grill and set aside on a large cutting board.
Now, prepare the noodles & sauce.
Bring a large pot of water to boil.
While waiting for the water to boil, combine all of the ingredients under “Noodles & Sauce”, except the Lo Mein noodles, in a medium mixing bowl, set aside.
Add the noodles to the boiling water and cook according to package directions.
Remove the noodles from the water, drain and place back in the pot on the stovetop over low heat. Add the sauce and toss with the noodles.
Chop the veggies and add to the noodles and sauce.
Feel free to garnish with a little fresh chopped cilantro or crushed red pepper flakes for a little extra heat!
Grab a pair of chopsticks and dig in!

Love this! We rarely grill anything but corn (and meat, of course). Grilling other veggies would add a whole new dimension of flavor to our BBQs. Great recipe!
