Warm Blue Cheese Bacon Spinach Dip

It’s rich, creamy, cheesy, bacon-y goodness all whipped up into one deliciously decadent dip!

After purchasing 3 pounds of blue cheese at Costco, (rookie Costco mistake!) I had to figure out what I was going to make with it!

I decided that I would put a new spin on Spinach Artichoke Dip and instead make Blue Cheese Spinach Dip and throw in some bacon, because everything’s better with bacon!

Blue Cheese Spinach Dip Ingredients

Ingredients

  • 1 tablespoon olive oil
  • 1 cup onion (thinly sliced)
  • 4 cloves garlic (minced)
  • 4 cups baby spinach
  • 2 cups sour cream
  • 8 ounces cream cheese
  • 1 cup blue cheese crumbles
  • 4 slices bacon (cooked and crumbled)
  • ½ teaspoon ground black pepper
  • ½ teaspoon salt
  • 1 tablespoon chives (chopped)

Instructions

Preheat oven to 375°F.

Add the olive oil to a large skillet over medium heat. Once warm, add the onions and cook for 4-5 minutes.

Sauteed Onions

Toss in the garlic and cook for an additional minute.  Add the baby spinach and cook until wilted.

Caramelized Onion and Spinach Dip Recipe

Add the sour cream, cream cheese, blue cheese crumbles, bacon, salt, pepper and chives to a large mixing bowl.

Mix well then add the sauteed onions, garlic and spinach.

Spoon the dip into an oven safe baking dish.

Place in the oven and bake for 15 minutes.

I served the dip to friends with a warm sliced baguette and it was a big hit.

Forewarning, this is a rich and hearty dip, not for the faint of heart!
