Blood Orange Baked Salmon & Carrots

Chipotle pepper, honey and blood oranges create a delicious glaze for this healthy and gluten free baked salmon recipe with rainbow carrots!

Last week, we grabbed happy hour tacos and margaritas and she arrived with a grocery bag full of fresh picked blood oranges.
I’m not going to lie, most of the blood oranges ended up in mimosas and margaritas by the pool this weekend, but I did set a few aside to make this Blood Orange Baked Salmon recipe!
I combined the blood oranges with chipotle pepper and honey for a delicious glaze to top this baked salmon recipe. I then grabbed some rainbow carrots, because hello gorgeous, to go right along side the bright and colorful salmon!
The dish turned out so tasty, and down right beautiful! So many colors, so much flavor, and bonus, it’s totally healthy and gluten free, because, hello swim suit season right around the corner!
Blood Orange Baked Salmon Ingredients
- 3 blood oranges (divided – 2 juiced, 1 sliced)
- ¼ cup honey
- 1 tsp chipotle powder
- ½ tsp cumin
- ½ tsp paprika
- 3 cloves garlic (crushed)
- 1 lb fresh salmon
- 2 lbs fresh whole carrots (peeled)
Blood Orange Baked Salmon Instructions
Preheat the oven to 400°F.
In a small bowl, whisk the 2 juiced blood oranges (should equal app. ½ cup), honey, chipotle powder, cumin, paprika and garlic together, to make the glaze for the salmon.
Place the salmon in a baking dish and surround with the carrots.
Pour the glaze over the salmon and carrots. Place the sliced blood orange on top of the salmon.
Place in the oven for 25 minutes.
If you’d like to add a starch on the side, white rice or cilantro lime cauliflower rice would be delicious with this dish!

This was delicious! The carrots weren’t quite done, though, so I might cut them lengthwise in half next time. I also used smoked paprika instead of the chipotle powder – was excellent! We have a blood orange tree, so this was an ideal recipe…and I made it on Valentine’s Day! Great colors! Thank you for sharing.
