Fig & Jalapeno Grilled Cheese

Roasted jalapeños, dried figs and spicy cheddar cheese are combined in this delicious, sweet and spicy, vegetarian jalapeno grilled cheese sandwich recipe!
This coming Wednesday, April 12 is National Grilled Cheese Day! What a time we live in where cheesy deliciousness sandwiched between buttery bread gets its own day of celebration! 😉
In honor of this glorious holiday, I whipped up a couple of new grilled cheese recipes, including this Jalapeno Grilled Cheese with Figs.
It’s a little sweet, a little spicy and a fun twist on grilled cheese to celebrate the holiday!
Fig & Jalapeno Grilled Cheese Ingredients
- 4 large jalapenos
- 8 slices sweet Hawaiian bread
- 4 tbsp butter (softened)
- 8 slices spicy cheddar cheese (sliced) – (the spicy cheddar you see pictured above is REALLY SPICY, if you like a milder spice, use pepper jack cheese)
- 24 dried figs
Fig & Jalapeno Grilled Cheese Instructions
Heat the broiler on the oven to high, then place the jalapenos on a baking sheet under the broiler.
Broil for 3-4 minutes per side, or until the skins are black and bubbling.
Remove from the oven and immediately place the jalapenos in a ziplock bag and seal shut.
Wait 5-10 minutes then remove the jalapenos from the bag. When cool enough to touch, peel the jalapenos, remove the stem, slice open and remove the seeds and slice into 3-4 strips.
Butter one side of each slice of sweet Hawaiian bread. Place a slice of cheese on the opposite side of each slice of bread. On four of the slices of bread, place one sliced jalapeno and 6 dried figs.
Cover with the other slices of buttered bread with cheese.
Heat a large skillet over medium heat and grease lightly.
Add the sandwiches and grill until browned on the outside.
