It’s delicious on it’s own or topped with bacon, pickled onions, and arugula, to add even more flavor to these steakhouse-style burgers.

We’re a blue cheese family! In fact, we almost always have blue cheese in our fridge. We put it on everything from eggs, to salads, to pasta, to burgers. This funky cheese is so creamy and delicious, and when you put it on a burger, it really feels like you’re eating a fancy steakhouse burger.

But the good news is, it’s a lot more affordable to make these burgers at home, than ordering them at a steakhouse. And they only take 20 minutes to make, which means you can make them for an easy weeknight meal! These feel like special occasion burgers, but they’re really anytime burgers.

You can amp up the flavor in a number of different ways by adding peppery arugula, bright pickled onions, sweet caramelized onions, umami-packed sautéed mushrooms, or sweet and salty bacon jam. The options really are endless with the toppings for these burgers. Or you can always keep things simple and just add lettuce and tomatoes.

The star of the show really is the thick, juicy, perfectly seasoned, grilled burger, topped with a heaping spoonful of blue cheese sauce!

Ingredients

  • Ground beef – I recommend a ground beef that’s 80/20, meaning 80% lean and 20% fat. This will give you the perfect fat content to make tender, juicy burgers!
  • Hamburger seasoning – this easy blend of 5 spices, includes salt, black pepper, paprika, garlic powder and onion powder. It adds a great flavor to any burger recipe, and it’s easy to mix up in 5 minutes or less. Click the link for the recipe, mix up a big batch and store it in your pantry for anytime you want to make burgers!
  • Worcestershire sauce – my secret ingredient for adding a wonderful umami flavor to burger patties. If you don’t have any Worcestershire sauce in the kitchen, you can use soy sauce instead.
  • Blue cheese crumbles + blue cheese dressing – these two ingredients are combined to make the sauce to top the burgers. Think of the sauce as an extra thick and chunky blue cheese dressing.
  • Hamburger buns – I recommend brioche buns, as the buttery flavor is so delicious. But any burger bun will work.

Instructions

I’ve included step by step photos below to make this recipe super easy to follow at home. For the full detailed recipe instructions and ingredient quantities, scroll to the recipe card at the bottom of this post.

  1. Form the burger patties. Combine ground beef, hamburger seasoning, and Worcestershire sauce in a bowl. Divide the meat mixture into four 6 ounce burger patties, about ½ inch thick. I use this burger press to get perfectly formed patties. Use your thumb to press an indentation in the middle of the burger. This will help prevent the burgers from shrinking up as they cook.
  2. Prepare the blue cheese sauce. In a small bowl, combine the blue cheese dressing and blue cheese crumbles. Set it aside.
  3. Grill the burgers. Heat a grill over medium-high heat. When the grill is hot, add the burger patties. Cook for 4-5 minutes, flip and cook for an additional 4-5 minutes. Remove the burgers from the grill and set them aside on a cutting board, or clean plate. Immediately top with the blue cheese sauce, about 3 tablespoons per burger, then allow the burgers to rest for 5 minutes.
  4. Assemble the burgers. While the burgers are resting, toast the buns on the grill, or in a skillet on the stove. Add the toppings of your choice to the bottom bun. Place the grilled burger with the blue cheese sauce on the toppings. Add the top bun and serve immediately.

Optional toppings

  • Pickled onions – I love the tang these pickled red onions add to this blue cheese burger. They pair perfectly with the rich, salty flavor of the blue cheese and really make this feel like a gourmet burger. You can make the pickled onions in advance and store them in the fridge for up to 2 weeks.
  • Caramelized onions – if you prefer caramelized onions over pickled onions, try adding these deliciously sweet onions to the burger. While caramelizing onions does take a little time, it’s super easy! You can make them ahead of time and store them in the fridge for up to one week, or the freezer for 3 months.   • Raw onions – if you don’t have the time to pickle or caramelize onions, you can simply add slices of raw onions to the burgers. Red onions will add a nice bite, whereas sweet yellow onions will add more of a mellow, sweet flavor to the burgers.
  • Arugula or lettuce – I added fresh arugula to these burgers to give them a real steakhouse feel and add a great peppery flavor. Feel free to use any type of lettuce or greens that you like. A leaf of butter lettuce, romaine, leaf, or iceberg lettuce will all work.
  • Tomatoes – a big slice of a juicy tomato is a delicious addition to these burgers.
  • Mayonnaise – the blue cheese sauce adds all of the creaminess I need to these burgers, so I don’t add mayo. If you want to, I recommend spreading some on the bottom bun, before adding the other toppings, like lettuce, tomato and onion.
  • Avocado – for a creamy addition to the burgers, smash a quarter of an avocado on the bottom bun before adding the arugula or lettuce. 
  • Bacon jam – I absolutely love the pairing of bacon and blue cheese. If you have time to whip up some of this bacon jam before making these burgers, I promise that you won’t be disappointed by the sweet and salty flavor it adds!
  • Bacon – if you don’t have time to make bacon jam, but still want to add bacon to these burgers, follow my guide for how to cook bacon in the oven, and add 1-2 slices to each burger.

Recipe tips

  • Do not immediately place the burgers on the buns when removing them from the grill! This is a common mistake people make when preparing burgers, and one that I did for years. By placing the toasted buns and grilled burgers on separate plates, you allow the juices to redistribute throughout the burgers and not just soak right into the buns. I recommend waiting 5 minutes before assembling the burgers. Just like you rest a steak, resting burgers makes them more juicy and flavorful! And this process prevents your buns from getting soggy, so it’s a win-win!
  • Cooking a one inch thick burger for 4-5 minutes per side over medium-high heat will result in a medium burger. If you’d like your burger medium-well, add 1 minute per side. If you’d like well-done burgers, cook them for 6-7 minutes per side.
  • Always make sure your grill is hot before adding the burgers. Adding burgers (or any food for that matter) to a hot grill is important for cooking safety. It will also give you a beautiful sear on the outside, while keeping the burgers super juicy on the inside. Burgers should be cooked over medium-high heat, between 350-400 degrees fahrenheit.
  • Never flatten the burgers with a spatula while they’re on the grill. This will release all of the juicy flavor in the middle of the burger, creating a hamburger that’s less flavorful and juicy.
  • This recipe can be made on the stove. No grill? No problem! Simply cook the burgers on a grill pan, cast iron skillet, or the heaviest large skillet you have available. Place the skillet on the stovetop over medium-high heat. Add the burger patties and cook for 4-5 minutes per side.
