Gluten Free Banana Walnut Waffles

These delicious gluten free banana walnut waffles are also dairy free and egg free, making them a delicious way to start the day, no matter your dietary needs!
These waffles were inspired by a combination of extra bananas in the house and my desire to incorporate flax seeds into a new recipe.
Did you know that flax seeds can be mixed with water and used to replace egg? Me either! Until recently, that is. The substitute for the egg worked great in this recipe and now I have a gluten-free, dairy-free, egg-free waffle that is delicious and can be enjoyed by everyone.
Ingredients
- 1 1/2 cups Premium Gold Gluten Free Flour
- 1 tablespoon sugar
- 2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 tablespoons Premium Gold Fine Ground Golden Flax Seed
- 6 tablespoons water
- 1 cup coconut milk
- 2 tablespoons honey (divided)
- 1 teaspoon cinnamon
- 1 tablespoon olive oil
- 1/3 cup walnuts
- 2 bananas (sliced)
Combine the flour, sugar, baking powder and salt in a small mixing bowl.
In a large mixing bowl combine the flax seed and water, then add the coconut milk, 1 tablespoon honey, cinnamon and olive oil.
Whisk together, then add the flour mixture.
Combine well, then add the walnuts and one sliced banana.
Mash the banana slightly into the mixture.
Spoon the mixture into a waffle iron and cook.
Top with the extra sliced banana then drizzle with the additional tablespoon of honey.
Serve with a fresh glass of juice for a well balanced breakfast that’s also fun and scrumptious!

- Top with the extra sliced banana, then drizzle with the additional tablespoon of honey.
