Sriracha Lime Chicken

This Sriracha Lime Chicken recipe is as easy as it is delicious! Sriracha lime marinated chicken is baked in the oven for a healthy, gluten free meal!
Since transitioning to “Fit Whit” over the last two months (AKA so much eating as a food blogger = need to hit the gym!) I’ve been looking for ways to incorporate healthy-er meals at home in between food blog recipes & eating out.
One of my favorite go-to, easy dinner meals is a burrito. Fill it with whatever goodies I have in the fridge, wrap it up in a giant tortilla and dig in!
While “Fit Whit” will not be giving up burritos anytime soon, I figured a great, easy, go-to alternative would be burrito bowls.
Whip up some delicious chicken on Monday, put it in the fridge, then use it in burrito bowls all week long. Enter: Sriracha Lime Chicken.
It fits all of the qualifications, healthy, delicious and super easy!
About mid-way through baking this dish, I thought “if this tastes as good as it smells right now, my tastebuds are going to be super excited!” And were they!
Hands down, my new favorite super easy chicken recipe!
Sriracha Lime Chicken Ingredients
- ½ cup olive oil
- ¼ cup fresh cilantro (chopped)
- 2 tbsp lime juice
- 2 tbsp sriracha
- 3 cloves garlic (crushed)
- ½ tsp kosher salt
- 1 tsp black pepper
- 4 chicken breasts (app 2 lbs – boneless, skinless)
- 2 limes (sliced)
Sriracha Lime Chicken Instructions
Combine the olive oil, cilantro, lime juice, sriracha, garlic, salt and pepper in a small mixing bowl.
Place the chicken in an oven-safe dish and pour the marinade over the chicken.
Thinly slice the additional limes and place on top of each piece of chicken.
Cover and place in the refrigerator for one hour to marinate.
Before removing from the refrigerator, pre-heat the oven to 400°F.
Remove the chicken from the refrigerator. Remove the cover from the dish and place in the oven to bake for 30 minutes.
As I mentioned before, my original reason for creating this recipe was to make it into a burrito bowl, so I did!
I served the chicken over cilantro lime rice and topped it with black bean corn relish & avocado sauce. O-M-G! It was so amazing!
I used a piece of chicken for each burrito bowl and ate burrito bowls for my next 4 meals. (Don’t judge me, this stuff is ridiculously delicious!) 😉
This chicken would also be amazing served over Cilantro Lime Cauliflower Rice, Mexican Quinoa Salad or Restaurant Style Mexican Rice, or if you’re in the mood for a tortilla, wrap it up into a taco or burrito!

I used “milanese” thin chicken breasts, half the olive oil and only marinated for 30min and it turned out amazing! I’m not sure that the normal chicken breasts would cook through in 30min. I took the stems from the cilantro and put them in the water I cooked my boil in bag rice in for a nice kick of flavor.
