On the One Year Anniversary of the blog I made the announcement that I would be adding “Chopped Challenge Thursdays” and “Single Sundays” to the site.
While “Chopped Challenge Thursdays” have been going strong, “Single Sundays” have yet to make an appearance on the blog. I blame this on the fact that I cook like an Italian grandma (meals for 6 or more people!) and I’ve been busy, busy, busy!
But never fear, Single Sundays are here!
This week I whipped up a dish that was quick, delicious and easily prepared for one!
Prep Time: 4 minutes Cook Time: 6 minutes
Ingredients (serves 1)
1 salmon burger
2 tbsp buffalo sauce
1 cup romaine lettuce
1/4 sliced red onion
1/2 tomato (chopped)
1 tbsp blue cheese dressing
Place the salmon burger in a small skillet over medium heat and cook for 3-4 minutes.
Flip the burger and brush with half of the buffalo sauce.
Cook for 3-4 minutes then flip again and brush with the remaining buffalo sauce.
Remove from the heat and prepare the salad by combining the lettuce, tomatoes and onion.
Toss with the blue cheese dressing then place the salad mixture on a plate.
Top with the salmon burger and dig in!
This makes for the perfect lunch or dinner for one filled with Omega 3 “happy” fatty acids from the salmon!
Salmon burgers can be found fresh or frozen in most major grocery stores.
Trader Joe’s Tacos combine spicy ground beef with fresh vegetables and Mexican cheeses for a deliciously simple dinner recipe!
I made this recipe one night after a long day. You know how that goes, you’re on your way home from school, work or whatever your day holds, you’re so exhausted but you know that there’s nothing at home to eat!
Some people take the fast food route, I take the “fast cooking” route, but before you can “fast cook” you have to “fast shop” and that’s where Trader Joe’s comes in!
Being a smaller, specialty grocery store there’s not all the navigating through aisle after aisle to get what you need for dinner. My favorite thing about Trader Joe’s is I know I’m getting fresh, healthy food with no artificial ingredients or preservatives which is very important to me and time-saving because there’s no need to read labels on everything!
You also can’t beat the price! Everything needed for these Trader Joe’s Tacos, which feeds 4, can be purchased for $13.13 (yes that’s actually the exact amount it came out to! All the sudden 13 doesn’t feel so unlucky 🙂 ) That comes out to $3.28 per person! Cheaper AND much more delicious and nutritious than anything that could be bought at a fast food joint and it only takes 15 minutes to make!
Ingredients (serves 4)
1 lb ground beef
1.3 oz package taco seasoning
1/2 cup water
8 flour tortillas
1 cup mexican blend cheese
1 cup romaine lettuce (chopped)
1 tomato (chopped)
1 red onion (chopped)
1 jalapeño (chopped)
Other Optional Ingredients
Start by cooking the ground beef. Once browned add the taco seasoning, water and combine well.
Next chop the veggies.
Once the seasoning is cooked into the meat, heat the tortillas wrapped in a paper towel in the microwave for 45 seconds.
Put the tacos together by spooning the hamburger meat into the tortillas.
