Ingredients
2lbsskirt steak
Cajun Marinade
2tablespoonsolive oil
1tablespoonlemon juice
½tablespoonapple cider vinegar
½tablespoonTabasco hot sauce
1tablespoonCajun seasoning
8small tortillas, corn or flour
½cupcotija cheese, crumbled

Instructions
Add the skirt steak to a large ziplock bag with the olive oil, lemon juice, apple cider vinegar, Tabasco hot sauce and cajun seasoning.
Toss to coat the skirt steak, place in the refrigerator and marinate for at least 30 minutes.
Heat a grill to medium-high heat.
Place the steak on the grill, grill for 7-9 minutes per side.
Remove from the grill and rest on a cutting board for 5-10 minutes.
Use a sharp knife or electric knife to thinly slice the cajun steak against the grain.
Heat the tortillas on the grill for 30 seconds per side.
Serve the cajun steak in the tortillas with cotija cheese and the toppings of your choice.
