On my web series “Cooking Secrets of a Single Girl” Tuesdays are all about “Taco Tuesday” so when filming the first month of my series I had to come up with a couple new and delicious taco recipes to add some flavor to Tuesdays segments!
This week, I prepared these delicious dessert tacos and I have to say, they were un-believeably scrumptious!

- 1 lb apricots (peeled and sliced)
- 1 lemon (juiced)
- ¼ cup water
- 1 tsp cinnamon
- ½ cup brown sugar
- 1 cup mascarpone cheese
- ¼ cup powdered sugar
- 1 tbsp vanilla
- 8 small flour tortillas
- 2 tbsp butter
- 2 tbsp cinnamon sugar
- ¼ cup honey
Preheat oven to 425°.
Add the sliced apricots to a large skillet over medium heat. Top with the lemon juice and water. Sprinkle with the cinnamon and sugar. Caramelize for 10-12 minutes.
Whip the mascarpone, powdered sugar and vanilla together in a large bowl.
Spread the cheese mixture in the middle of each tortilla.
Top with caramelized apricots.
Roll the tacos tightly and place on a baking sheet.
Brush with butter and sprinkle with cinnamon sugar.
Bake for 12-15 minutes.
Remove from the oven and immediately drizzle with honey.
Allow to cool for 10 minutes then dig in!
