BBQ Onion Ring Mushroom Cheddar Chicken Sandwich

BBQ Cheddar Chicken Sandwich Ingredients
- 8 Frozen Onion Rings
- 4 chicken breasts (app. 2 lbs)
- 1 cup bbq sauce
- 1 tbsp olive oil
- 1 cup baby bella mushrooms (sliced)
- 4 oz cheddar cheese (sliced)
- 4 hamburger buns
BBQ Cheddar Chicken Sandwich Instructions
Preheat the oven to 400°F.
Place the onion rings on a baking sheet.
Bake in the oven for 10 minutes, flip and continue baking for an additional 8-10 minutes.
While the onion rings are baking, toss the chicken breasts in the bbq sauce.
Place the bbq chicken in a cast iron skillet on the stove over medium high heat. Cook the chicken for 7-8 minutes per side.
In a separate skillet, add the olive oil over medium heat. Saute the mushrooms for 5-7 minutes.
Remove the mushrooms from the heat and remove the onion rings from the oven.
Place ¼ cup of sauteed mushrooms and 2 onion rings on each chicken breast.
Top each chicken breast with a slice of cheddar cheese. Place the skillet in the oven for 2-3 minutes, or until the cheese has melted.
Place the loaded chicken breasts on hamburger buns and serve.
