Tomorrow is Thanksgiving and I couldn’t be more excited for Cranberry Glazed Turkey, Sweetpotato Stuffing and Mashed Sweetpotatoes! And the best news is, I’ve already got delicious recipes for all of the leftovers!

Mashed Sweet Potato Pancakes

These pancakes, made with leftover mashed sweetpotatoes, are light, fluffy, delicious, and so easy to make!

Sweet Potato Pancakes Recipe

I made the mashed sweetpotatoes and pancakes with California Sweetpotatoes, which are a good source of manganese and dietary fiber, and perfect in pancakes, casseroles, dips and salads!

California’s generous sunshine and warm, dry climate provide the perfect conditions for the highest quality product by enabling lush, rapid growth and a year-round Sweetpotato supply.
