Slow Cooker Cilantro Lime Cumin Chicken Tacos

Last weekend I joined my friends at Litehouse Foods to serve up tacos & cocktails at their booth at the Natural Products Expo in Anaheim.
I had so much fun meeting their team, trying new products and sharing this super simple taco recipe with the thousands of attendees at the expo!
Slow Cooker Chicken Tacos
- 1 tsp ground cumin
- 1 tsp Litehouse Instantly Fresh Cilantro
- 1 tsp kosher salt
- 1 lb boneless, skinless chicken breast
- 8 small corn tortillas
Lime Cumin Dressing
- ½ cup olive oil
- ¼ cup lime juice (freshly squeezed)
- ¼ cup rice vinegar
- 1 tsp cumin (ground)
- ½ tsp salt
- 1 clove garlic (crushed)
In a small bowl, combine the cumin, cilantro and salt. Rub this mixture on the chicken breast and place in the slow cooker.
Combine the ingredients to make the lime cumin dressing and pour over the chicken in the slow cooker.
Cook on low for 6-8 hours, or on high for 3-4 hours. Remove the chicken and shred, then place back in the sauce in the slow cooker and toss.
Serve on corn tortillas, or tortilla chips for mini tacos, topped with avocado, fresh cilantro, jalapeños, grated cheese or the toppings of your choice.
