Last weekend I was invited to attend a BBQ with a friend… about two hours before the BBQ.  Being a food blogger, it is completely unacceptable to show up to a BBQ empty handed… even when you only have two hours notice!

I was trying to figure out what I had in my pantry that I could toss together that didn’t require a trip to the grocery store. Luckily I had a bag of white chocolate chips and a bag of Pumpkin Spice Hershey Kisses staring at me from the pantry.

It was one of those moments where you look at two items, a light bulb goes off and you immediately think “the two of you need to meet and become friends!”

Looking for a fun new sushi place to hit downtown San Diego?  Look no further than K7, where they’re serving up unique rolls with cool decor and delicious craft cocktails!

I dined in for lunch a couple weeks ago and tried some of their signature items, including one of their craft cocktails, the Ushidoshi, also known as “their version of the mule”.  The cocktail combines shochu (Japans version of vodka, but lighter!), yuzu, mint, bitters and ginger beer.

I love making my own homemade pizza dough, so I figured it was about time I made my own flatbread as well!

Flatbread is the thin and crispy sibling of pizza that is perfect for topping with a number of delicious ingredients!  I made this homemade basil flatbread as the base for my Grilled Peach Flatbread with Goat Cheese and Balsamic Reduction. The result was crisp perfection!

Grilled Peach Flatbread with Goat Cheese

Instead of ingredients or recipes, some days I simply head to the grocery store with a list of ideas like “balsamic peaches, chocolate bacon donuts, pizza with goat cheese, creamy avocado dressing and grilled flatbread.”  Sometimes each item in the list becomes its own dish, sometimes they go together!

I decided that “chocolate bacon donuts” could pretty much stand on their own and “creamy avocado dressing” would go on a delicious new salad, but I thought the “balsamic peaches, pizza with goat cheese and grilled flatbread” could all be combined into a sweet, salty and scrumptious new recipe. That is when this dish was born!
